In this discreet and secluded spot, on top of one of Forte’s most eminent hotels, the sea and the mountains meet to expand the view to wider skies. The sun’s plunge into the sea can be contemplated from its glass windows, and, at the same time, you can be mesmerized by the stillness that descends from the peaks of the Apuan Alps. Michelin-starred chef Valentino Cassanelli recaptures this “panorama” in his cuisine; now an expert connoisseur of the excellences raised or cultivated here and finally prepared without waste, often with far-off countries in mind. Three souls coexist in him: the land of origin (Emilia), which we encounter in the heartwarming embrace of flavors; Versilia and Tuscany, which in twelve years have now become home and a bountiful repository of fine products; and ultimately, the world, to which Cassanelli often turns in seizing a few secrets. The Tyrrhenian sea urchin risotto, with inland black truffle simmered with Thai tom yum soup inserts, epitomizes this magical interweaving. The force of sea and inland products is thus elevated by lesser-known aromas, generating a harmonious intricacy of tastes translated to the palate in reassuring familiarity. This philosophy of bringing tradition together with distant worlds, filtered through the technique and sensitivity of the chef, is echoed in the other businesses Cassanelli oversees. To complement the gourmet restaurant Lux Lucis, the chef curates the service line at the Dalmazia beach club (a waterfront hotspot), Principe (the hotel restaurant), and 67 Sky Lounge. The latter – a quality landing place for signature cocktails on the Principe’s terrace – shares atmosphere, staff, and cuisine with Lux Lucis. A cuisine where snacks and quick dishes emerge to be paired with liquor combinations that sommelier Sokol Ndreko rigorously cherry-picks from the finest producers on a par with premium wines and craft beers.
