Sciabola
It is now well known. Forte dei Marmi is a star-studded land in cuisine, and – indeed – no fewer than five restaurants bear the star awarded by the red Michelin. And who knows, maybe a sixth will be added since Alessandro Ferrarini, also sporting a dazzling recent past, is coming to Sciabola. This restaurant is immersed in the greenery of Roma Imperiale, the exclusive garden district whose quietude surrounds the St. Mauritius Hotel. And it is in such peace that – for the past two seasons – the estate has decided to open its evening dining offerings to outside customers, letting local ingredients, interpreted by an acclaimed chef, speak for themselves. A continuum between the garden and the room overlooking the kitchen, whose colors echo the soothing hues of the outdoor vegetation, will host guests’ dinners at Sciabola until November. Ferrarini’s iconic dishes include risotto, a reminder of the chef’s Lombard origins, albeit always in a waltz of local ingredients that rotate as the seasons change. Thus, we may savor great-tasting but lesser-known fish because special skills are required to prepare them. But it does not stop there: our palate will also encounter wild herbs, crustaceans, caviar, and plant extracts. Coquina clams, an emblem of Versilia, will not be missing, served in a simple but creative dish. The philosophy behind this cuisine is to exalt local excellence by focusing on an Italian taste that allows little room for influences from other cultures and overdone techniques while not sacrificing imagination. The diner gets carried away with one of the two proposals that counterbalance the à la carte menu – whose protagonist remains the fish of the Upper Tyrrhenian Sea – and is led to dream following the chef ’s creative flair. A sort of blindfolded leap of faith, knowing that a down-to-earth personality, a devotee of the territory in its entirety, is guiding the dinner. An attentive and meticulous service rounds out an evening aimed solely at endearing patrons even more to these shores.
